For dinner, I made cajun roasted yams, with a side of garlic greek yogurt to cut the spice, and garnished with green onions. They were very delicious, called for few ingredients, and very easy to make!

Use equal parts of these spices to make a cajun spice:

  • Salt
  • Garlic powder
  • Paprika
  • Cayenne pepper
  • Thyme
  • Oregano
Cut yams into thin slices and lay on a baking tray.
Drizzle olive oil and cajun spice on the sliced yams, and place the garlic cloves on the baking tray. Bake at 400 degrees for one hour, rotating halfway through.
Mix roasted garlic into greek yogurt for a dip and garnish with sliced green onions!

What I would modify for next time:

  • Too much salt! A recipe I read online for cajun spice called for equal parts of all the spices but I think a little less salt would taste better as it was a little overpowering.
  • The yams were a little over cooked so I think either cutting them thicker or cooking them for less time would avoid them burning.
  • The garlic cloves should be taken out at the halfway point as they were too overcooked to mash into the yogurt.
